According to The Post and Courier, Mark Bolchoz, who has played a key role in launching five Italian restaurants during his four-year tenure at Indigo Road Hospitality Group, will soon open his own venture.
In the new year, Bolchoz will step down from his role as culinary director of Indigo Road’s Italian concepts to open Cane Pazzo at 1276 Yeamans Hall Rd. Described as “a neighborhood osteria serving classic Italian flavors by way of Lowcountry ingredients,” the restaurant will offer a fresh take on Italian dining,
Cane Pazzo’s PR team told What Now Charleston that the menu will highlight locally sourced ingredients, drawing on freshly fished, farmed, and grown produce from nearby purveyors. Offerings will include refined yet approachable small plates, handmade pastas, and large-format entrées designed for sharing, all prepared in the restaurant’s wood-fired oven. The dishes will pair with an extensive selection of old-world and natural wines.
The space will blend comfort with sophistication, featuring exposed brick walls, terrazzo flooring, and classic Italian-inspired details such as archways and repurposed furnishings. A Dutch door, which doubles as a wine window, will connect to a patio with picnic seating for a lighter menu of bites and drinks. The outdoor area will also serve as a venue for events, pop-ups, and other lively programming. Indoors, the restaurant will seat approximately 75 guests.
